Spaghettini, Spaghetti, or Linguine
1/2 cup extra-virgin olive oil
3-4 plump garlic cloves, minced
1/2 palm full of red pepper flakes
1/2 palm full of italian seasoning
Salt/pepper to taste.
First off, prep your water for the pasta - bring it to a boil, salt it, and throw in the pasta.
While that's going on, mince your garlic. You'll be tossing the pasta in a pan with the sauce, so make sure you've selected one that's big enough.
While the pasta is cooking, heat the olive oil over a low-medium heat. Add the garlic and cook very gently until it softens and begins to turn golden (around 8-10 min).
Crush the red pepper and italian seasoning into the oil/garlic mix by rubbing it between your hands. Add a ladle-full of the pasta water and increase the heat a bit - let it bubble for a few minutes (4-5 min).
When the pasta is almost done, drain it and toss it in with the sauce, mixing well. Let it sit for a minute or so, then serve with salt and pepper.
