2 1/2 lb. Eye of Round Roast
3 Tbs coarse ground mustard
salt & pepper to taste
Preheat oven to 475. Let roast come close to room temperature for even cooking. Trim if needed and pat dry. Rub mustard onto the meat. Sprinkle with salt and pepper. Place on baking sheet and bake for 30 minutes. Turn oven off, do NOT open the oven door, and leave the roast to slow bake in the cooling oven for another 2 1/2 hours. Slice thinly and serve.
Alternatives: Coat with olive oil instead of mustard, use dried herbs (thyme, rosemary, etc). Can serve with gravy, au jus, or even some horseradish sauce.
