2 tbl olive oil
500g carrots, peeled and cut lengthways to thick strips
1 large onion sliced
1 tea grated fresh ginger
1 tea garam masala (or curry powder if preferred)
½ tea chilli powder
1 tbl plain flour
1 cup vegetable stock (or chicken if not serving to vegetarians)
180g cashew nuts (optional)
Sauté carrots and onion in the oil for 5 minutes.
Stir in the rest of the ingredients and simmer 15-20 mins.After an initial stirring to thicken, stir frequently.
