Mixed Mushroom Frittata

Mixed Mushroom Frittata

15 ml oil
15 ml butter
100gr ham or bacon
3 chopped spring onion
100gr button mushrooms
200gr brown or porcini mushrooms
2 gloves of garlic crushed
30ml lemon juice
6 eggs whisked
Parmesan cheese


Grease a square glass dish
Heat oil and butter and sauté the ham and spring onion, add the mushrooms +-5 minutes
Add garlic, thyme and lemon juice, season to taste
Scrape into dish
Pour eggs over and sprinkle with parmesan
Bake at 180ºC for 15-20 minutes
Serve with toast or salad
