2 medium size uncooked and peeled Beets
2-3 medium size granny smith apples unpeeled
2 -3 medium size carrots peeled
1/2 cup unsweetened fine or medium shredded coconut
2 key limes or 1 regular lime IF they are unavailable.
Option 1 shred each on grater using the largest holes.
Option 2 chop each individually
I have used both ways and I do prefer to shred the salad instead its a finer texture.
chopping gives it a different texture.
Wash and Dry the Beets carrots,Apples and Limes well.
You may use gloves for the beets or your hands will stain.
1.Peel the Raw Beets then shred into a medium bowl.
2.Core the apples, peel if desired then shred into the bowl with the beets.
3. peel and shred carrots into bowl
5.grate the green peel only off the key limes & juice the key limes ..watch out for the seeds! Add the juice and peel to the salad.
6.Stir well then chill for 1 hour.
This is the only way my 13 yr old son will eat Beets.
