Oatmeal-Fruit Muffins

A healthy alternative to regular muffins, and in my oppinion way more tastey!! Super healthy but they are still muffins so don't eat a billion of them thinking you're doing good on your diet :)

Preparation time: 20 min
Cooking time: 30 min

Difficulty: Easy - for beginners
Serves: 6 or 12, depending on what type of pan you use

1 c. flour
3/4 c. oats
1/3 c. toasted wheat germ
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/8 tsp. salt

3/4 c. fat free milk
1/2 c. packed brown sugar
1/4 c. egg substitute (like egg-beaters)
1/4 c. unsweetened apple sauce
1/2 tsp. vanilla

1/2 c. dried fruit (I like cranberries the best)


Spray pan with non-stick spray

mix all dry ingredients in one bowl, and all wet ingredients in another. Then mix both together and add the fruit and pop it in the muffin pan. The muffin pan? The muffin pan.

Give it like 20 mintues at 350 then start poking them with a toothpick. If it comes out clean then they are finished.
