Spinach, Strawberry and Almond Salad

Great summer salad. Yummy!!! Had it at a friend house last summer and I think I've made it about 20 times, LOVE IT!!!

Ingredients

Candied almonds

1/2 cup slivered almonds
1 tbsp corn syrup
1 - 1/2 tsp sugar
pinch of salt and cayenne pepper
(I double this, cause they are so good!!)

Dressing

1/4 cup olive oil
2 tbsp sugar
2 tbsp raspberry wine vinegar
1 tsp of toasted poppy or sesame seeds (I use poppy seeds and just put them in the oven w/ the almonds)
pinch of salt and pepper

1 cup of strawberries (you can use raspberries but I like strawberries better)
12 oz baby spinach (a standard bag or the small box you get at the grocery store)

Method

In a small bowl toss together almonds, corn syrup, sugar salt and cayenne pepper until coated. spread in a single layer on lined baking sheet (use parchment paper, everything else I've tried just sticks) . Bake in 325 deg. for about 12-15 minutes or until golden brown and sugar is bubbly. let cool completely on pan. brake into pieces.

Put dressing ingred. in a small bowl and whisk together. (I found if you put it in an old sippy cup w/ a lid and shake it, it's easier and you can just store it there also, but each their own!).

Toss spinach and dressing in a bowl and top w/ candied nuts and strawberries.
