Chai Coffee

1 c | 250 mL whipping cream
2 tbsp | 25 mL sugar
6 c | 1.5 L dark roast brewed coffee
4 cardamom pods
4 whole star anise
3 whole cloves
2 cinnamon sticks
¾ c | 175 mL coffee liqueur or brandy
Ground cinnamon for garnish


Whip cream to soft peaks, fold in sugar and chill. Pour hot coffee into a saucepan. Crush cardamom pods and star anise and add to pot. Add cloves and cinnamon, and steep over low heat for 5 minutes. Strain. Fill each glass with an ounce of coffee liqeur and top with coffee. Top with whipped cream and a sprinkle of cinnamon.
