Lemon - Ginger Chicken

A healthy alternative to normal chinese lemon chicken

Grated zest of one large lemon or 2 Tbsp
1/3 cups fresh squeezed lemon juice
2 tsp minced peeled fresh ginger
2 tsp. brown sugar
1 tsp. peanut oil
4 skinless boneless chicken breast


Combine all the ingredients in a zip-lock bag, turning manytime to coat the chicken. Squeeze out the air from the bag. Refridgerate for at least 1 hour.

Grill or bake the chicken, your choice. I usually george foreman it up. If you want to use the merinade to pour over the chicken when you serve you can, just be sure to boil it first since it has the bacteria from the raw chicken. It safe after you boil it though so no worries.
