devilled eggs

8 eggs
1/4c + 1T mayonnaise
garam masala to taste
1/8 t salt
1/4 t pepper
3/4 t mustard


The main thing is to know how to hard boil eggs. Cover the eggs with water in a pot, bring to a rolling boil, and boil for no more, no less than 10 minutes. Draining and running cold water should cool them to the touch easily. Let the eggs set in the refrigerator for 1/2 hour.

Peel the eggs and halve them lengthwise. I'm allowing for 2 casualties by having you boil 8. Pop 6 yolks into a bowl and mash with other ingredients until smooth. Transfer into a zip lock bag, remove excess air, seal, and snip off a corner. Pipe filling into empty whites.
