Dietary guidance: v v
1/2 onion - diced
1/2 green pepper - diced
1 large can of kidney beans - drained
1 large can of tomatoes - diced with juice
1 tsp chili powder
To Taste - Salt and Pepper
1 cup shredded cheddar
1.5 cups brown rice
3 cups cold water
pinch of salt
*I tend to add more chili powder then the recipe calls for... do it to taste.*
Boil water, add brown rice and salt. Simmer for 45 mins covered. (or as per instructions on the package)
Saute onion and green pepper in a little dab of olive oil. Add drained kidney beans. Add diced tomatoes and juice. Add chili powder and salt & pepper. Simmer slowly over low heat stirring regularly as you wait for the rice.
When the rice is done cooking, but before you serve, add the cheddar cheese and lightly stir to melt.
Serve over the brown rice.
Vegans - Don't add the cheese. It's fine without it.
