Peanut satay pork/chicken

Spicy peanut satay.

Preparation time: 5 mins
Cooking time: 10 mins

Serves: 2-4


1 tsp oil
180 g pork/chicken
1 clove crushed garlic
1/2 tsp each of tumeric, cumin, coriander and Chinese five-spice
150mL water
3 tbsp crunchy peanut butter
1 tbsp lemon juice
2 tbsp soy sauce
pinch chilli powder
2 oz crumbled creamed coconut (a solid! look in the indian cuisine section of the supermarket)


heat frying pan until very hot. Add oil and stir fry meat for 1-2 mins. Add garlic and spices and cook for a further 30 secs. Add remaining ingredients, mix and heat until thickened. Serve with rice or noodles, or try it with other side dishes (I found steamed vegetables and baked potato pieces were beautiful with the peanut taste)!
