easy "my-thai" green curry

1 tsp veg oil
2 tablespoons thai green curry paste (or more to your liking)
1/3 cup organic veg/chicken broth
1 can coconut milk
1/4 cup fresh organic basil
1 tbsp fish sauce (omit for veg version)
2 tbsp brown sugar
1/4 cup bamboo shoots
veggies to your liking (peppers, asparagus, snap peas, carrots, etc)
1 lime


combine the curry past with the coconut milk, and sinmmer for 5 mins on med, stirring occasionally
heat skillet, add oil, and sautee veggies
add the remainder of the ingredients to the sauce, (reserve some of the fresh basil for garnish) simmer two mins, and add to the veggies
simmer on med, until the veggies are cooked to your liking
garnish with fresh basil, and fresh lime juice
serve with rice, or rice noodles
(shrimp or chicken work well in here too)
