Seven Layer Tortilla Pie

1 Can (19oz) kidney beans
1 Can (19oz) romano beans
1 cup divided salsa choose hot or mild
2 cloves garlic minced
1 tablespoon cilantro fresh, chopped
1 can (19oz) black beans rinsed and drained
1/2 cup tomatoes chopped, from a can if fine
7 tortillas use coloured ones for fun
2 cups cheese cheddar, shredded


1. Preheat oven to 400F

2. In a large bowl, mash kidney and romano beans (rinsed and drained first). Stir in 3/4 cup salsa and garlic

3. In a separate bowl, mix together 1/4 cup salsa, cilantro, black beans and tomatoes.

4. Place 1 tortilla in a pie plate, tart dish or large cast iron skillet. Spread 3/4 cup kidney and romano bean mixture over tortilla to within 1/2 inch of edge. Top with 1/4 cup cheese and cover with another tortilla. Spread with 2/3 cup of black bean mixture and top with 1/4 cup of cheese. Repeat layering twice. Cover with remaining tortilla and spread with remaining kidney and romano bean mixture and cheese. Shred extra cheese if you run out.

5. Cover with foil and bake in preheated oven for about 40 minutes. Cut into wedges and serve with salsa and sour cream
