1 large chicken breast cut in strips
2 bell peppers sliced (green, red, yellow, orange, take your pick)
1 red onion sliced
150 grams grated mature cheddar
1 large handfull of roughly chopped coriander
4 flour tortilla wraps
1 teaspoon ground cumin
1 teaspoon ground coriander
chili powder to taste
squeeze of lime
Fry the chicken in the oil, add the peppers, then the onions. Add the ground spices and season. When cooked, put in a big bowl and add the cheese, fresh coriander and lime. Mix.
Put one wrap in the frying pan, add half the mixture and top with a second wrap. The melting cheese should keep everything together. Use a plate to turn it over and fry on the other side.
Leave to cool slightly, slice and enjoy with some tomato salsa, sour cream or guacamole.
