Steamed Fish Parcels

1 1/1lb / 700g thick white fish fillets
2 teaspoon turmeric
2 teaspoon of salt
3 small onions, chopped
2 cloves of garlic, chopped
1 teaspoon powered ginger
1/2 teaspoon chilli powder
1/2 teaspoon ground rice
4 fl oz / 100 ml coconut milk
1 tablespoon corn oil
12 leaves of chinese cabbage
raffia lengths for tying


Cut fish into 24 x 1 inch (2.5cm) cubes. Rub with half of turmeric and salt and put to one side. Puree onions and grlic on a food processor. Add ginger, chilli, rice and any remaining salt and turmeric and process for 30 seconds. Mix in coconut milk and oil and blend for 15 seconds.

Cut each leaf half across its width. Spread some paste in the centre of each half. Place a fish piece on top and spread with more paste. Fold up into parcels and tie with raffia. Place in a steamer and steam over a pan of boiling water for 15-20 minutes.

Serve warm.
