Amatriciana Sauce

yummy, yummy tomato sauce for pasta-traditionally served with bucatini, (the thick, hollow spaghetti)

Preparation time: 30 mins
Cooking time: 45mins to several hours your choice

Serves: 4


1 tsp olive oil
2 med yellow onions, coarsely chopped
4 oz pancetta, trimmed of fat and cut into 1/2 x 1 inch strips
4 garlic cloves, chopped (or more)
3 c chopped fresh plum tomatoes (must be fresh)
1 oz capers, drained
pinch of sugar
pinch of crushed red pepper flakes
1/2 c dry white wine
salt & freshly ground pepper to taste


In a heavy medium sized saucepan over medium high heat, heat the olive oil. Add the onion & saute for 10 mins.
Stir in the pancetta & garlic and saute for 5 mins. Stir in the tomatoes, capers, sugar, pepper flakes & wine. Simmer, uncovered for 30 mins. Serve with pasta and sprinkle with Romano cheese, if desired.
I simmered it much longer, great flavour!
