1 1/2 lbs ground meat
1 med. onion, chopped
1 (10 1/2 oz) can cream of chicken soup
1 (10 1/2 oz) can cream of mushroom soup
1 (10 1/2 oz) can enchilada sauce-hot or mild
1 (4 oz) can chopped green chilies
1 doz. corn tortillias
1/2 lb. mild cheddar cheese, grated
Brown meat with onions. Drain fat. Add soups, sauce and chiles. Cook over medium heat until well mixed, stirring occasionally. Tear 4 tortillas in pieces and place on bottom of dish. Pour some meat sauce over tortillas and continue layering until all of meat sauce and tortillas are used. Cover with cheese and bake at 350 degrees for 20 min. or microwave until cheese melted.
Note: This recipe makes 1 large or 2 small casseroles. The casserole may be frozen and baked at a later date.
