Preparation time: 15
Cooking time: 30

Serves: 4

1 (80z) can pineapple chunks, undrained
1 tbs cornstarch
1 cup chile sauce (if I don't have chile sauce, I often substitute red hot sauce and chili powder)
1 tbs brown sugar
1/8 tsp cinnamon
1/4 tsp crushed red pepper flakes, optional
canola oil
1 green pepper
1 medium sweet onion
1 jalapeno pepper
4 pork chops, cubed
seasoned salt and pepper to season
granulated garlic to season

Blend pineapple juice with cornstarch; stir in pineapple chunks, chile sauce, brown sugar, cinnamon, and crushed red pepper, if desired. Set aside. Saute pepper, onion, and jalapeno in oil for 2-3 minutes. Add pork chops, and seasoned salt and pepper and garlic. Brown pork chops and drain excess grease. Pour pineapple mixture over pork chops. Cover and simmer for 15 minutes or until cooked through. Serve with rice.
