Zoobey's Smooth Southern Sweet Tea

I live in Minnesota and it is impossible to find a quality glass of southern sweet tea like I used to enjoy when I lived in Arkansas and Florida. This one tastes awesome and I've modified it to only use one measuring cup and a pitcher

Serves: Makes 8 Cups


6 Black (Orange Pekoe) Tea Bags (or 4 family sized tea bags), A large pinch (1/8 Teaspoon) Baking Soda, 1 1/4 Cup Sugar (adjust to taste), 8 Cups Water


Use your measuring cup to boil 2 cups of water in the microwave. My microwave does this in about 5 minutes. (or for a faster rolling boil use a hot pot) Place tea bags and the pinch of baking soda in the bottom of your pitcher (The baking soda takes the edge off of the tea making it silky smooth). Add the 2 cups of boiling water and immediately cover using the pitcher's lid or plastic wrap. Allow to steep for 15 minutes. Remove the tea bags but do not squeeze them too much as this will make the tea bitter. Add sugar and stir until dissolved. Add 6 more cups of water and serve over ice! Sit in a rocking chair on your porch for the full effect. Enjoy! Can be doubled.
