Rhubarb cake

A Rhubarb cake

Preparation time: not long
Cooking time: 40-45 minutes



1/2 c. butter
1 1/2 c. sugar
2 eggs beaten
3 c. flour
4 tsp. baking powder
1 1/4 - 1 1/2 cups milk
2 tsp. vanilla
pinch of salt
Mix all togerther as for a cake and pour into
9 x 13 greased and floured pan


Combine 1/2 cup sugar and (1) 3oz. strawberry ( or any othe flavou of Jell-O and 4 cups Rhubarb cut into 1/2" pieces. Mix and place over batter.
Combin 1/4 cup flour; 3 tbsp butter and 1/2 cup sugar (whit or brown) and crumble crumble over the top.

Bake at 375 degrees celsius for 40-45 minutes.
