1 tablespoon cornflour
2 tablespoons cold water
450ml/3/4 pint apple puree (make your own it's better than shop bought)
400ml//14fl oz berry juice (rapsberry is best if you can get it)
1/2 teaspoon salt
2 teaspoons grated lemon rind
little honey (this is optional)
2 tablespoons lemson juice
150ml/1/4 pint white wine
grated nutmeg (optional)
Dissolve the cornflour in the water in a saucepan. Add the apple puree, berry juice, salt and lemon rind and stir well. Heat gently, stirring, until clear and thickened. Taste and add a little honey, if liked. Cool, then chill.
Stir in the lemon cuice and wine before serving, sprinkle with nutmeg if liked.
