Scotch Eggs

Despite the myth, Scotch eggs are easy to make.

3 hard boiled eggs
plain flour for coating
225g/8 oz sausage meat (you can buy this in supermarkets in packs)
1 egg, beaten
4 tablespoons dry breadcrumbs
oil for deep frying


Coat the eggs in flour, then cover with the sausage meat. Flour again, then dip in the beaten egg and coat with the breadcrumbs.

Deep fry until golden brown and drain on kitchen towels.

Can be eaten hot or cold and ideal for picnics.
