Cottage Cheese Pancakes

Old home recipe that gives an interesting twist to a traditional breakfast food.

Serves: 12 pancakes


2 cups sifted cake-and-pastry flour
2 tbsp granulated sugar
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 eggs, seperated
1 cup buttermilk
1/2 cup cottage cheese
1/4 butter, melted
vegtable oil


In large bowl, combine flour, sugar, baking powder, and salt. Whisk together egg yolks, buttermilk, cottage cheese, and butter; pout over dry ingredients and stir just until moistened. In seperate bowl, beat egg whites into flour mixture; fold in remaining egg whites. Let stand for 30 min.

Heat griddle or large nonstick skillet over med heat. Brush wiht 1/2 tsp of the vegtable oil. Using 1/4 cup of batter per pancake and brushing pan with more oil as needed. Cook for two min or until bubbles break on top but don't fill in. Turn and cook for 2 min longer until bottoms are golden.
