Lemon Curd

1 oz butter
1/2 lb sugar
8 tablespoons water
2 lemons (large)
3 eggs (large)


Put the grated rind of the lemons, the juice, butter ans sugar into a basin and stand in a saucepan half full of boiling water. While this is getting hot, mix the eggs and water - be very careful to remove all lumps. Stir in other ingredients and cook until thick.

This keeps very well in a fridge.
