Cooking time: Just melting the butter and chocolate

300g good quality chocolate
50g icing sugar
200g digestive biscuits - crushed
50g melted butter
500g mascarpone cheese
Mix the melted butter and crushed biscuits together and press into the bottom of a cake tin and leave to chill in the fridge for 15 mins.
Melt the chocolate gentrly in a bowl over a saucepan of simmering water. Once melted add the icing sugar and stir in.
Put the mascapone into a bowl and beat it to loosen it slightly, then add it to the chocolate mixture and mix these two together quickly. Spread this onto the chilled biscuit base. Chill for at least a couple of hours, but overnight is also good, to let the mixture set properly.
