Chicken With Grapes

A quick and easy skillet chicken meal.

Preparation time: 15 mins
Cooking time: 20-25 mins

Serves: 2-4


1 cup leeks - chopped
1/2 cup white wine
1 cup chicken broth [low sodium]
2 tbs butter/margarine
1 cup seedless grapes [halved]
spinich or mixed salad greens


To skillet with chicken, add 1 cup chopped leeks; cook, stirring, until softened, 1 minute. Add 1/2 cup of white wine; cook stirring up bits, 1 minute. Add 1 cup chicken broth. Bring to a boil. Cover; over low heat, cook until chicken is cooked through [12-15 mins]. Transfer the chicken to a platter. Over medium-high heat, bring sauce to a boil; cook, stirring frequently until sauce thickens [about 7 mins]. Stir in 2 tbs butter or margarine; cook until thickened. Stir in 1 cup of halved grapes. Pour over chicken and serve with cooked spinich or mixed salad greens.
