4 boneless pork filets
3-4 tbsp mango chutney
1 tbsp olive oil
1 tsp butter
1/3 c orange juice
chili flakes
salt & pepper
Heat olive oil in a large heavy-bottomed saucepan.
Season pork with salt, pepper and chili flakes.
Brown pork on one side, around 5 minutes.
Flip, add butter and brown other side. Baste the top side too.
When pork is browned, add mango chutney.
Remove pork to a warm plate once cooked through. Add orange juice to chutney and sauce.
Cook the sauce until it thickens slightly.
Pour over pork and serve with rice (brown rice works really well).
