Ingredients


- 250 g scraped carrots, grated - 125g raisins -6 tablespoons of olive oil -125g unrefined cane sugar -250g self-rasing flour -1 tablespoon grated nutmeg -1 teaspoon ground cinnamon -8 tablespoons of apple juice concentrate or real maple syrup -4 tablespoons of orange juice

FROSTING 200g dairy-free alternative to soft cheese (or if you cant get hold of that use dairy free cream and add a bit of flour) - grated rind of one orange -25 g caster sugar -strands of orange rind to decorate

Method

1. line a 20cm square cake tin with non stick baking paper
2. put the carrots, raisins, olive oil and sugar into a bowl and mix. then add the flour, nutmeg, cinnamon,apple and orange juices and mix until everything is combined-the mixture should be quite sticky.
3. spoon into cake tin and bake in preheated oven 160 degrees C .gas mark 3, for 1hr 15mins, or until skewer comes out clear. leave in tin till cool.
4. to make frosting, mix the dairy-free soft cheese with orange rind and caster sugar, then spread over top of the cake. decorate with strands of orange rind.
