Bread pudding

1 loaf of plastic read
1 pat of butter
4 eggs
1 pt double cream
1oz caster sugar
Brown granulated sugar
currants and sultanas
1 lemon (juice and peel)


Take a loaf of plastic (shop bought bread) and trim the crusts off.

Melt a pat of butter butter in a pan and then dip the bread on both sides and arrange in a greased over proof dish( I always think triangles look nicest).

For the custard mix, beat together 4 egg yolks and a pint of cream, with 1oz of sugar. Pour over the bread.

Sprinkle sultanas and currants, brown granulated sugar and grate the zest of 1 lemon over the top (maybe a squeeze of juice too)

Pop in a medium oven until bubbly and brown and crunchy!!!
