Frozen Strawberry Pie

Frozen pie with a chocolate crust, like ice cream and cookies, what could be better?

1 box (9 oz) thin chocolate wafer cookie (Nilla), finely crushed
1 tbsp sugar
1 tsp cinnamon
1/2 cup (1 stick) butter, melted
2 pints vanilla ice cream, softened
1 quart (2 cups) strawberries, hulled

Strawberry Purre:
1 quart (2 cups) strawberries, hulled
1/4 cup strawberry jam.


Heat overn to 350°. In small bowl, combine waferts, sugar, connamon, and butter. Press over bottom and up sides of 9-inch pie-plate.

Bake at 350° for 10 min.

Strawberry Purre:
In food-processor, puree 1 quart strawberries and jam. Force through strainer (should make 2 cups)

Let pie cool completely.

Place softened ice cream in large bowl. Swirl in 1 and 1/2 cups of puree. Spoon into pie crust. Freeze for 4 hours or overnight until solid.

Arrange the other quart of stawberries on top of pie in decorative fashion. Garnish with the rest of the puree. If pie is frozen solid, let stand for 30 min at room temperature before serving.
