Potato & Leek Soup

2 leeks
400g potatoes
1 clove of garlic
Half a red chili (full one if you like it spicy)
750ml vegetable stock
Spoon of crème fraiche
Sea salt and freshly ground pepper
Knob of butter


1. Clean and chop leeks into even pieces (best to use middle half of leek)
2. Peel and chop potatoes into even blocks (enables potatoes to cook evenly)
3. Chop garlic and chili

1. In a thick bottomed pan melt butter over medium pan
2. Saute leeks for aprox 4 -5 minutes until they start get soft
3. Mix in Garlic, chili and potatoes and stir together for about 1 minute
4. Pour in Stock and cook at a simmer until the potatoes are cooked
5. Now blitz (in a blender or with Staafmixer) the entire mixture until it becomes one even liquid
6. Stir in Crème Fraiche
7. Add Salt and pepper to taste

Optional tasty extras (add to completed soup)

Grated Parmasan cheese
