Cucumber & Chilli Salad Dressing

Ingredients

225ml rice vinegar(red wine vinegar also works here)
225ml water
125 gram sugar
2.5cm fresh root ginger
1 garlic clove
salt
One cucumber
6 spring onions
2 chillis

Method

Preparation

1. Chop garlic and ginger
2. Grate cucumber
3. Chop Spring onions
4. Deseed and chop Chillis

Cooking

1. Boil the vinegar, water, sugar, garlic, salt & Ginger together for about 2-3 minutes until sugar dissolves
2. when cool - sieve mixture to remove the ginger a nd garlic
3. now pour over the grated cucumber and the chopped spring onions and chillis
4. leave for about 2 hours to fuse together
5. This dressing will keep for about 1 week
