yummy pretzels

1 packet yeast
1 cup warm water
2.75 cups of flour
1 tbsp sugar
1/2 tspn salt
2 tbsp softened butter

baking soda wash:
1/2 cup warm water
2 tbsp baking soda

coarse salt
3 tbsp melted butter


preheat the oven to 450 F. combine yeast and warm water. fast rising yeast only needs to be well-mixed in first, but this can vary for other kinds. mix in the flour, salt, and sugar. knead for several minutes by hand, then let sit, covered, in a warm place as dough rises. spray baking sheets with non-stick spray. prepare baking soda wash as dough rises.

separate the dough, roll into sticks, or roll to form pretzel shapes. dip in baking soda wash and sprinkle with course salt. bake for 12-15 min or until golden brown or just a tad darker depending on preference. i tried both and they were all good. when the pretzels come out, let them cool for a minute, then brush with melted butter until all the butter is used. enjoy.
