1 cup white grape juice
1/2 cup sugar
1 tablespoon lemon juice
1 1/2 teaspoons grated lemon peel
1/2 teaspoon vanilla extract
1/8 teaspoon salt
3 cups fresh sliced strawberries
2 cups fresh blueberries
1 cup fresh blackberries
1 tablespoon minced fresh mint
In a heavy saucepan, bring juice and sugar to a boil.
Cook, uncovered, until reduced to 1/2 cup (about 15 minutes) stirring occasionally.
Stir in the lemon juice, peel, vanilla, and salt.
In a large bowl, combine the berries and mint.
Add syrup and toss gently to coat.
Cover and refrigerate until serving.
