1 garlic glove, halved
2 tbsp cider or red wine vinegar
1 tsp. salt
1 tsp. sugar
1 tsp. dry mustard
.5 tsp. pepper
6 tbsp salad oil
8 cups crisp young spinach, hard stems removed
3 hard cooked eggs, grated
8 slices bacon, fried and crumbled
2 or 3 green onions, chopped fine
Beat first 7 ingredients and refrigerate.
Prepare remaining ingredients.
Add dressing just before serving, removing garlic.
