Couscous Curry Salad

1 cup whole wheat couscous
1 1/4 cups boiling water
1/2 chopped red or green pepper
1/2 cup chopped onion (I like red onion or green onions)
1/4 cup dried cranberries or raisins
1/4 cup chick peas

(I will add different veggies according to what I have. It always tastes good so change it up if you want.)

2 tablespoons of olive oil
4 tablespoons of vinegar (rice wine vinegar or balsamic)
1 tsp curry
pinch of ginger, dry mustard, and garlic salt.
salt and pepper to taste

(I always add a little more of this or that according to taste. Will often add more curry)


Cook couscous. Boil water, add couscous, leave off heat. Ready in 5 minutes. Allow couscous to cool.

Once couscous is cooled add chopped veggies and dressing.
