Spanish Rice

1/2 cup chopped onion
1/2 cup chopped green pepper
1 clove garlic
1 Tbl. oil
1 tsp. chili powder
1 14.5 oz can diced tomatoes
1 1/2 cup uncooked rice
1 14.5 oz can diced tomatoes and green chilies
Severl dashes of hot sauce
1/2 cup mexican style cheese


Saute onion, green pepper, and garlic in oil till tender. Add chili powder. Stir in undrained tomatoes, rice, chile peppers, hot pepper sauce, 1 cup water, and 1/4 tsp. salt. Bring to boil and reduce heat. Simmer uncovered for about 20 minutesor until rice is tender and most of the liquid is absorbed.

Place rice in a casserole dish and cover with cheese.

Cook at 350* for 10 minutes or till cheese is melted.
