2 cups dry bread crumbs (i recommend japanese style bread crumbs called panko, available at meijer)
1 1/2 tsp salt
1 1/2 tsp paprika
1 tsp celery salt
1 tsp onion salt
1/4 tsp pepper
1 tsp poultry seasoning (optional)
1/4 cup vegetable oil (canola is best for baking)
blend all ingredients with fork or pastry blender. will keep unrefrigerated in a tight container.
preheat over to 350
put 1/2 cup coating in a plastic bag. moisten chicken pieces with water and shake one piece at a time in bag. add more mix as needed. lay chicken skin-side up in greased pan and back 1 hour or until tender. no turning needed.
