Haloumi Baked Veggies with Bacon-Wrapped Feta Chicken Balls

Ingredients

For the Haloumi Bake (for 2 people... multiply as needed)

1 large sweet potato, the orange-fleshed variety
1 large Desiree potato or other red/firm potato
1 red onion
1 yellow pepper
1 red pepper
half a head of garlic
4 tbspns olive oil
black pepper
a pack of halloumi cheese, sliced thinly
Oven proof baking dish,

For the Bacon-Wrapped Feta Chicken Balls
4 chicken breasts
8 rashers of bacon
olive oil & brush
Oregano
A block of feta cheese
cocktail sticks

Method

Haloumi Bake: serves 2
Preheat the oven to 200C/ gas mark 6.

Cut the sweet potato into rough 4 cm cubes and the Desiree slightly smaller (2.5cm) as the sweet potato will cook more quickly.

Halve the red onion then cut the half into 4-6 segments, discarding any tough outer skin. De-seed the peppers and cut into 2.5 cm squares, and separate the cloves of garlic.

Put everything into a large roasting tin and, using your hands, give the vegetables a good coating of olive oil. Season with black pepper, but not salt (whilst it cooks at least) as the cheese will make it salty (and anyway, the salt will make water leech out).

Cook for 45 minutes, by which time the vegetables should be cooked through and here and there tinged with brown. You'll need to turn the oven up to maximum, or light the grill for the endgame: so place the thinly sliced cheese on top of the bake, and put it back in the very hot oven or under the grill until the cheese has melted and turned slightly brown on top, about 5-10 minutes. Serve straight out of the roasting tin.

Bacon-Wrapped Feta Chicken Balls: Serves 2
Preheat the oven to 200C/ gas mark 6.

Beat the chicken breasts with a rolling pin or tenderizer until they are flattened out.

Coat them in olive oil and sprinkle on oregano (not too much)

Add crumpled-up bits of feta to the middle of the chicken breasts and wrap the chicken around the cheese into a ball-shape.

Squewer the balls with a couple of cocktail sticks to hold them in place.

Wrap the bacon around the chicken balls and use more cocktail sticks to hold in place....

Cook alongside the Haloumi bake for about 50 mins to an hour...

serve with fresh basil leaves (if you are feeling fancy...)
