Cooking time: 50 min
1 1/2 pounds of pork spare ribs cut into pieces
1 tablespoon of oil
2 teaspoons of finely chopped garlic
1/4 cup of dry sherry (or just use chicken stock)
1 tablespoon of salbal oelek (or chilli sauce)
2 cups of water
2 teaspoons of hoisin sauce
3 tablespoons of sugar
1 tablespoon of soy sauce
1) Place the pork in a large pan with water to cover. Bring to a boil, reduce hear, simmer for 5 minutes and drain well.
2) Place all the remaining ingredients and the pork ribs in a wok or deep pot. Covwer and simmer for 45 minutes. Drain but reserving a cup of the liquid.
3) Heat a clean skilled and fry to pork to brown them. Add the reserved liquid and cook over medium heat until it forms a glazed coating for the pork.
4) Serve with the sauce poured over the pork. Great with rice.
