Potato Salad

This is a dish I often get requests for in the summer. It is the same recipe that I used for the barbecue at the Mud Festival if any of you were there. I don't know where I learned it from, it is a mix of several recipes, I think, that work better togethe

Ingredients

2 pounds of potatoes
5 eggs
1 onion chopped finely
3 stalks of celery chopped
6 dill pickles chopped
5 strips of bacon
1 cup mayonnaise
2 tbsp Dijon Mustard
2 tbsp vinegar
1 tbsp dill
salt and pepper to taste

Method

1) Wash the potatoes. Cut into bite size pieces (your preference) Throw potatoes and eggs into a pot of cold water. Bring to a boil. Boil for 10 minutes or until potatoes are soft. While potatoes and eggs are cooking, fry the bacon until crispy.
2) Drain potatoes and eggs. Remove eggs and place in cold water. Pour vinegar over potatoes. The potatoes will soak up the vinegar. Remove excess vinegar.
3) Place onions, celery, and dill pickles in a large bowl. Peel eggs and break into small pieces. Add to bowl. Add mayonnaise and mustard. Mix well. Taste and add salt and pepper as desired.
4) Chopped bacon into small pieces. Put potatoes into bowl and mix. Be gentle because you don't want the potatoes to break down too much. Sprinkle with bacon. Chill for 20 minutes and serve.
