Lemoney Chicken Rice Stir Fry

Serves: 1


3 oz. boneless chicken breast
1/2 tbsp. lemon juice
1/4 chopped Broccoli
1 1/2 tbsp. fresh shredded carrots
4 whole medium cashews
1 1/2 tbsp.raisins
1/3 tbsp. olive oil


Cooke rice, set aside. Rinse and pat dry chicken; cut into bite-size pieces Rinse and broccoli. Coarsely chop cahsews; set aside. Coat a non-stick skillet with cooking spray and heat over medium heat: add chicken and sauté until no longer pink inside, about 5-6 minutes. Remove from pan and reserve. Coat skillet again with cooking spray; add broccoli and sauté until just tender, about 3-4 minutes. Add chicken, cooked rice, shredded carrots, cashews, lemon juice, olive oil and raisins and heat through, about 1-2 minutes, stirring to mix well. Serve.
