Rice Salad with Cashews and Raisins

2 cups cooked rice, cooled
2 cups spinach leaves
1/3 cup raisins
1 cup bean sprouts
3 stalks celery, sliced
1 red or green pepper, chopped
2 Tablespoons parsley
1/4 cup shallots
1 cup cashews
1/4 cup soy sauce
1/2 cup olive oil
1 to 2 cloves garlic, minced


Combine rice, spinach, raisins, celery, bell pepper, parsley, shallots, cashews. Combine soy sauce, olive oil, and garlic; shake well and pour over salad.
