2 cups pancake mix from Bisquick, I recommend the 'Heart Healthy' Kind
1 cup milk, or soy milk
1 cup fresh fruit, strawberries are a favorite
1/2 cup firm tofu
1 tablespoon sugar
Spread a tablespoon of olive oil on a cold griddle, and use a paper towel to spread it over the surface, then put it on medium-high heat. Pour all ingredients into a blender, and blend until smooth. Pour 1/4 cup onto the hot griddle, cook until there are bubbles on the pancake, and flip. Follow the same for the other side.
They are great with maple syrup.
Or as a snack with fruit.
Or as dessert with a bit of powdered sugar on them.
