Difficulty: Easy - for beginners
1 lb. ground beef
2 (10-oz) cans enchilada sauce
8 oz (2 cups) shredded cheese
1 (12-ct.) pkg. flour tortillas for soft tacos
Heat oven to 375°.
Brown ground beef over medium-high heat until thoroughly cooked, drain well. Stir in 3/4 cup enchilada sauce and 1 cup cheese.
Spoon enchilada filling onto tortillas; roll up and place seam-side down in lightly greased 13x9x2-inch baking dish.
Pour remaining enchilada sauce over top; sprinkle with remaining cheese. Bake at 375° for 15 to 20 minutes.
â€¢ stir 1 (4.5-oz.) can Old El Paso Chopped Green Chiles into filling mixture.
â€¢ add ½ cup chopped onion to ground beef while browning.
to make the casserole I basically use the above recipe with the following changes:
use corn tortillas and layer as follows: just enough enchilada sauce to lightly cover the bottom of the pan, tortillas, meat mixture, tortillas, enchilada sauce, shredded cheese
