Difficulty: Easy - for beginners

4.5 lbs. ripe tomatoes, scalded and peeled, stem ends and core removed, chopped

3 whole green chilies, chopped (You can use fresh or canned) (I put in 5)

1 large spanish onion, chopped

1 large green pepper, seeded and chopped

1 medium red pepper, seeded and chopped

3-6 whole jalapeno peppers, chopped (I used 12 fresh, you can use canned too)

5.5 oz. tomato paste

3/4 cup white vinegar

1/4 cup brown sugar

1 T. pickling salt

1/2 t. garlic powder (or 2 cloves, minced)

Combine all in a big pot. Bring to a boil, uncovered. Boil gently for an hour stirring occasionally. Adjust "heat" (the peppers) close to the end of cooking.

Makes 5 pints
