Difficulty: Easy - for beginners
3 large eggs
1 stick (that's right, the whole stick) butter
1/2 cup sugar
1 cup dark Karo syrup
1 teaspoon vanilla
1 cup pecans (whole, chopped or pieces)
Note from Lavern: This pie is not as sweet as most pecan pies, and of course all of the calories have been neutralized!
Melt the stick of butter and set aside to cool.
Beat the eggs, then add the sugar, syrup and vanilla. Add the cooled butter and the pecans; mix well.
Pour mixture into a 9 inch pie crust and bake at 350 for 50-55 minutes. The middle will "jiggle" just slightly when done.
Serve with a generous dallop of vanilla or butter pecan ice cream, and you'll think you died and went to Heaven!
