Preparation time: 15 min
2 cups edamame (peeled from pods)
1 tbsp lemon juice
8 half-inch slices of a french baguette
2 tbsp extra virgin olive oil
2 tsp sea salt
4 tbsp freshly grated parmesan
2 tsp groud pepper
Place edamame in a bowl (if frozen bring 4 cups of water to boil and blanch for 1 min, or microwave), add lemon juice.
Mash with potato masher.
Toast or grill bread.
Spread spoonful of mashed edamame on each slice, sprinkle with oil, salt, cheese, and pepper.
