Stuffed Bell Peppers

Ingredients

4 Large bell peppers (I prefer green)
1.5 lbs ground beef
2-3 medium tomatoes
1 can tomato sauce/paste, sliced or diced
2 cups rice cooked
Cheese, I prefer parmesean
any aditional veggies/seasonings you like
frying pan
baking dish

Method

Cut open tops of peppers, clean out inside
brown ground beef in pan, drain off fat,
Put tomatoes and other veggies in pan, allow to cook
Add rice and tomato sauce to pan, mix well and allow to cook through
turn off stove, use a spoon to stuff mixture into peppers, place in baking dish. If uneven, shave the bottom 'feet' off the peppers so they stand up
cover tops with cheese (sliced or grated)
bake peppers at 350 until peppers are wrinkly and cheese is well melted
